Ericka Briscoe
General ManagerEricka Briscoe traded a successful career in finance for the dynamism of hospitality, bringing with her a keen business acumen, a deep appreciation for exceptional dining, and an innate ability to make warm and memorable guest experiences. As General Manager of Bouchon Bistro, she oversees service and team development and is a focused leader who blends operational expertise with a genuine commitment to hospitality.
Ericka began her professional career as a licensed General Securities Representative in the financial services industry, working closely with international banks in the E.U. such as Credit Suisse. While living in Milan and Barcelona, she was enamored with the region’s historic culinary and wine culture, sparking an interest that would redefine her career. Upon returning to the United States, she transitioned into hospitality, gaining hands-on experience in South Florida before moving to New York to further her education and expertise.
Her dedication to wine and hospitality led her to pursue formal certifications, including the Court of Master Sommeliers Certified Sommelier credential, the Wine Scholar Guild’s French Wine Scholar designation, and the Wine & Spirits Education Trust Level III Award in Wine & Spirits. Her career flourished as she took on leadership roles with Jackson Family Wines in Healdsburg and Foley Family Wines, where she served as a Wine Educator and Sommelier for The Foley Food & Wine Society.
In 2016, Ericka relocated to Aspen, Colorado, where she managed restaurants and wine programs at establishments such as The St. Regis, Kenichi, Mawa’s Kitchen and Betula Aspen. Her desire for continuous learning and adaptability led her to take on contract roles at well-known destinations, including The Breakers Palm Beach, Ventuno Nantucket, and SENSEI by Nobu in Rancho Mirage, California, before joining the Thomas Keller Restaurant Group.
