Leigh ShamirPastry Chef
As Pastry Chef at Bouchon in Las Vegas, Leigh Shamir is responsible for the supervision of the pastry and bread operations for both Bouchon Bakery and the Bistro. In this role, she leads the team, manages the development of specialty pastry items and oversees daily production.
Leigh’s career with Chef Thomas Keller’s restaurants began in 2011 at Bouchon Bakery at Rockefeller Center, where she worked as a Chef de Partie. After three years, she moved to London, honing her culinary skills at Chef Gordon Ramsay’s restaurants, where she curated dessert menus for Pétrus, London House and Heddon Street Kitchen. In 2017, Leigh returned stateside to rejoin the team at Bouchon Bakery Rockefeller Center as Sous Chef and, over the course of three years, rose to Executive Sous Chef.
A native of Israel, Leigh gravitated towards pastry for its science and exacting nature. She holds a degree in Baking and Pastry Arts from the International Culinary Center in New York.
