An Evening with Island Creek Oysters

On Friday, June 20th, the evening begins with a Casa Dragones custom cocktail, passed canapés, and a raw bar reception in the Garden—where guests will have the opportunity to meet with Chef Keller and Skip Bennett. As the sun sets, everyone will gather in the West Room for a six-course tasting menu featuring the iconic Oysters and Pearls, a silky sabayon of pearl tapioca with Island Creek Oysters and Regiis Ova Caviar, and Scallop Ceviche, paired with Norwich Meadows Farm radishes, Hass avocado, and bright tomatillo salsa verde, to name a few. Each course draws inspiration from the sea, highlighting its freshness and depth of flavor.
Accompanying each course are exceptional wines and spirits, including Modicum Blanc de Blancs, Modicum Cabernet Sauvignon, and Casa Dragones Joven, to complement the evening’s menu.
