Thomas CastellonChef de Cuisine
Chef de Cuisine Thomas Castellon guides the culinary team at Bouchon in Coral Gables, Florida. In this role, he utilizes his knowledge of Chef Thomas Keller’s exacting standards and techniques gleaned during his tenure within the restaurant group. Overseeing the daily operations of the kitchen, Thomas’s responsibilities range from mentorship to seasonal menu development.
Thomas joins the opening team at Bouchon Coral Gables from The Surf Club Restaurant, Chef Keller’s debut Florida destination. There, as Executive Sous Chef, he collaborated closely with Chef de Cuisine Michael DeCicco, leading the restaurant to receive its first Michelin star in 2022. Thomas’s journey within the restaurant group began in 2019 as an Executive Sous Chef at TAK Room. Prior to that, he had the opportunity to cook in Michelin-starred kitchens in New York, including Lincoln Ristorante and Café Boulud.
